Background:
During thermal processing, retort standard procedures are sometimes not followed due to emergencies such as power failures, or retort faults that result in low processing temperatures, or "short-timing".These deviations from the standard operating procedures can result in an unsafe product. Rather than wasting the unsafe product, this course deals with the calculations necessary to first determine whether the product safety requirements have been met or and if the product has failed to meet the safety requirements, what further processing is necessary to ensure that the product is safe.
Aim:
- To equip the participant to identify and deal with deviations from standard retort operating procedures and to take appropriate
remedial action to ensure that the product is still produced.
Benefits:
At the conclusion of the course participants will:
- Be familiar with retort emergency situations that could result in
an unsafe product being produced.
- Be able to perform the necessary calculations to assess wether a product has met the safety requirements
despite the process deviation.
- To determine the additional processing requirements necessary to ensure the unsafe product is
made safe.
Target Group:
Senior retort operators, supervisors and factory managers.
Duration:
1 Day
This
course is presented as an inhouse course at the factory. It is however a pre-requisite that the participants have attended the normal
Retort Operators Course. It can be given in conjunction with the normal course.
